    ABSTRACT
    Klepon is a traditional cake . Klepon cake s are categorized as wet cake s. In general, klepon cake has a chewy texture and has palm sugar filling in it, while klepon cake is a unique cake , namely steamed sponge cake which has palm sugar filling on the cake layer and has a sweet cream, namely whippid cream.
    The method used is qualitative used to determine the processing and presentation of cake klepon at Harris Hotel Samarinda. The purpose of this study was to determine how to process and serve klepon cake to be developed into a good and quality product.
