    ABSTRACT
    Swiss-café Restaurant Swissbell-hotel Borneo Samarinda is one of the important efforts that must be considered in the implementation process. This is done to prevent food contamination that can be caused by several factors such as humans, work areas and equipment. The determination of personal hygiene standards, work areas and equipment must be carried out properly and correctly so that every product produced by the hotel restaurant is safe for consumption. Based on the information above, the authors conducted a study entitled "Application of Hygiene and Sanitation in improving the quality of food at Swissbell Hotel Borneo Smarinda". The purpose of this final project is to explore and expand knowledge about the application of hygiene and sanitation and to improve health, hygiene, and quality standards of a product if it is carried out in accordance with existing procedures.
    The making of this final project uses a qualitative type of approach whose data is taken from questionnaires, interviewed field supervisors, directly involved in activities at Swissbell-hotel Borneo Samarinda, literature studies that support the theory of the application of hygiene and sanitation Swiss-café Restaurant in Swissbell- Hotel Borneo Samarinda.
